HOW DO I CLEAN WHOLE SHRIMP?

bulletFirst pinch off the short swimmerets along the underside of the bending shrimp.  Peel off the shell, beginning from the thicker end moving down toward the tail.  If shrimp are to be served as a finger food, leave the tail's shell intact with one segment of shell attached.  Otherwise, gently pull off the tail shell, taking care to leave the morel of meat inside the tail on the shrimp.  This extra effort is worth it, since the "tail feathers" are completely edible, waste is minimized & the shrimp look better.
