Poaching means to cook a food gently in liquid. The liquid can be water, chicken or vegetable broth even dry vermouth. To poach chicken, put enough liquid to cover the chicken in a wide skillet & bring it to a simmer, when bubbles are just breaking around the edges. Slide boneless chicken breast (or other boneless chicken parts) into the liquid. Cook gently just until it's firm & not pink in the middle, 15 to 20 minutes. Remove using a slotted spoon or spatula to a paper towel. Serve as is or shred or chop it up for your favorite recipe. Hint: don't throw away the poaching liquid. You can use it in soups or to cook vegetables.
