TURKEY SOUP

INGREDIENTS:

bullet8 cups chicken or TURKEY BROTH
bullet1 onion, finely chopped
bullet3-4 carrots, peeled & finely chopped
bullet4 celery ribs, thinly sliced
bullet1 1/2-2 cups chopped cooked turkey
bullet3/4 cup chopped fresh mushrooms
bullet2 oz angel hair pasta
bulletSalt & pepper to taste
bullet3 Tbsp chopped fresh parsley for garnish

DIRECTIONS:  Bring broth to a boil & add onion, carrots, celery & mushrooms.  Reduce to a simmer.  Cook uncovered until vegetables are tender, about 20 minutes.  Add the pasta & cook 4-5 minutes, do not overcook pasta.  Stir in the turkey & cook until turkey is hot, about 3-4 minutes.  Salt & pepper to taste.  Serve in bowls with parsley on top.

SERVING:  4-6                                   TIME:  30

SERVING TIPS:  Serve with French rolls.
