SPLIT PEA OR LENTIL SOUP: Cook peas or lentils according to the recipe on the package & include the ham bone. SALAD: Toss small pieces of ham with avocado, chopped tomatoes, red onion rings, parsley & a vinaigrette. OMELET: Add small pieces of ham & roasted red peppers, chopped artichoke hearts & cheese to the omelet mixture. STIR-FRY: Combine chopped ham, onion, 2 Tbsp of freshly grated ginger, celery & mushrooms to hot oil. Cook on high heat for several minutes. Add a cup of cooked rice. Then add a beaten egg to the pan. Cook another minute or until egg is firm. Serve with chopped nuts. STUFFED SWEET POTATOES: Bake sweet potatoes. When fully cooked cut off the top horizontally; scoop out & mash the potato. Add a tablespoon of Dijon mustard, 2 Tbsp of butter & small pieces of ham. Mix & return to the shells. Dot with butter & bake another 15 minutes at 350 F. VEGETABLES: Add small pieces of ham while cooking fresh vegetables such as corn, beans, pea's, squash & more. When preparing stuffed peppers or squash use chopped ham instead of ground beef or sausage. |
