MANGO

 

SELECTION & STORAGE:  Ripe mangos give to the touch & are fragrant at the stem.  The color of a mango's skin is not a consistent indication of ripeness.  Look for fruit with hints of red, yellow or orange depending on the variety.  Ripen mangos at room temperature & refrigerate.  NUTRITION:  Vitamin A; Vitamin C; Potassium.  PREPARATION:  Slice cheeks from each side, avoiding the pit.  Score fruit into squares without cutting the skin.  Press skin so cut side pops outward.  Slice cubes from skin.  Or simply eat with a spoon.  SERVING IDEAS:  Mangos are delicious alone.  Add to salads, cereals, breads, beverages, yogurt, ice cream, pies, toppings & sauces.  Or try these recipes:
