POTATO SALAD FOR 4
BOILED POTATO
 |
3 cups small red potato or
other firm potato, room temperature, either sliced or diced. Skin can
be left on or removed. |
DRESSING
 |
Make your own using 1 tsp
lemon juice, 1 cup mayonnaise or cultured sour cream & dill weed. |

GREEN BEAN VINAIGRETTE
CHOICE OF ADD-IN'S

4 slices bacon, cooked,
drained & crumbled |

Capers to taste |
 |
Cayenne to taste |
 |
3/4 cup finely chopped
celery (with or without leaves) |

1 Tbsp Chives, chopped |
 |
1 cup (more or less)
cooked, cooled green beans |
 |
1/2 cup chopped cucumber
(peeled & seeded) |
 |
Dill pickle, chopped, to
taste |
 |
Green (stuffed or
un-stuffed) olives, sliced |
 |
2 (or more) hard boiled
eggs (see TO BOIL EGGS) |

Finely chopped sweet onion
(1 Tbsp to 1/2 cup) |

3/4 tsp paprika |
 |
1 Tbsp chopped parsley |
 |
Chopped pickled herring |
 |
Sliced water cress |
DIRECTIONS:
Combine
salad ingredients, gently mix, add dressing, mix to coat & refrigerate.
