WHITE FISH LOAF INGREDIENTS:
DIRECTIONS: Spray a loaf pan with pan spray then line it with wax paper & spray the paper with pan spray. Divide all ingredients except the carrot into halves. Cut the fish & onion into small pieces & place one half in a food processor & pulse a couple times. Add egg, meal, sugar, ice water & salt & pepper (about 1/2 tsp each) & pulse again. Place in a bowl & process the next batch processing the same way. Add the second batch to the bowl & mix well to combine. Spoon mixture about 1/2 way then lay the whole carrot & cover with the remaining half of mixture. Place in a large 9 x 13 baking pan with 2 inches hot water & bake at 350 F for 50-60 minutes. Remove from the oven & let it cool. Cover & refrigerate over-night. Slice & serve cold with beet horseradish. SERVINGS: 6 TIME: 1 hour 20 minutes WHITEFISH LOAF |
