WAFFLES 2

INGREDIENTS:

bullet2 cups all-purpose flour
bullet2 Tbsp baking powder
bullet1/4 tsp salt
bullet1 tsp sugar
bullet1 tsp butter + 1/2 cup melted butter
bullet1/2 red bell pepper, seeded & finely diced
bullet1/2 small onion, minced
bullet3/4 cup buttermilk
bullet1/4 LB finely diced baked ham or turkey
bullet1/2 cup grated cheddar (or your choice) cheese

DIRECTIONS:  Sift together flour, baking powder, salt & sugar into a large mixing bowl.  Melt the 1 tsp butter in a skillet over medium heat, then cook the bell pepper & onion, stirring until softened.  Add the melted butter, buttermilk, pepper, onion, meat & cheese to the flour mixture & mix just until blended, do not over mix.  The batter will look like muffin batter.  Spread about 1/4 cup of batter to a waffle maker that has been sprayed with pan spray & heated.  Cook until waffles are golden.

SERVINGS:  4-6                                    TIME:  25 minutes

SERVING TIPS:  Serve warm with your choice of warm syrup, chopped fruit or sour cream.
