VEGGIE SANDWICH

INGREDIENTS:

bullet4 pita breads
bullet1 1/2 cups (about 6 oz) shredded Monterey jack cheese
bullet1 zucchini (about 1/2 cup) chopped
bullet1 tomato (about 1/2 cup) chopped
bullet1 onion (about 1/2 cup) chopped
bullet1 can (4 oz) chopped green chilies, drained
bulletLettuce or shredded cabbage
bulletGarlic flavored Italian salad dressing

DIRECTIONS:  Combine cheese, zucchini, tomato, onion & chilies with a small amount (just enough to make the ingredients spread) mixing well.  Cut to top off each pita & gently place a layer of lettuce or cabbage inside.  Spoon the cheese mixture on the lettuce & top with another layer of lettuce/cabbage. 

SERVINGS:  4                                            TIME:  20 minutes

SERVING TIPS:  If making in advance refrigerate the cheese mixture until ready to use.  Sandwich should keep at room temperature for 3-4 hours.  If you are taking this to work for lunch see PACKING A LUNCH.
