VEGETARIAN CHILI

INGREDIENTS:

1 Tbsp vegetable oil

bullet

1 onion, chopped

bullet

1 Red bell pepper

bullet

2 cloves garlic, minced

bullet

2 large tomatoes, diced with juice

bullet

1 can (28 oz) plum tomatoes, chopped with juice

bullet

3/4 cup oil packed sun dried tomatoes, drained, chopped

bullet

4 Tbsp chili powder

bullet

2 cups water

bullet

3 cups great northern beans, cooked

bullet

Salt & pepper to taste

bullet

1 or 2 jalapeno peppers, seeded & chopped

bullet

2 stalks celery, chopped

bullet

1 tsp dried cilantro (or more to taste)

DIRECTIONS:  Heat oil in a large pot, add onion, bell pepper, celery & garlic.  Cook covered stirring often, until onion is tender DO NOT LET GARLIC BROWN, about 4-5 minutes.  Add remaining ingredients cooking 30 minutes, stirring often.  Salt & pepper to taste.

SERVING:  6                                    TIME:  45 minutes

SERVING TIPS:  Great served in BREAD BOWLS.

VEGETARIAN CHILI
