VEGETARIAN
CHILI
INGREDIENTS:

1 Tbsp vegetable oil |
 |
1 onion, chopped |
 |
1 Red bell pepper |
 |
2 cloves garlic, minced |
 |
2 large tomatoes, diced with juice |
 |
1 can (28 oz) plum tomatoes, chopped with juice |
 |
3/4 cup oil packed sun dried tomatoes, drained, chopped |
 |
4 Tbsp chili powder |
 |
2 cups water |
 |
3 cups great northern beans, cooked |
 |
Salt & pepper to taste |
 |
1 or 2 jalapeno peppers, seeded & chopped |
 |
2 stalks celery, chopped |
 |
1 tsp dried cilantro (or more to taste) |
DIRECTIONS: Heat oil in a
large pot, add onion, bell pepper, celery & garlic. Cook covered
stirring often, until onion is tender DO NOT LET GARLIC BROWN, about 4-5
minutes. Add remaining ingredients cooking 30 minutes, stirring
often. Salt & pepper to taste.
SERVING:
