TURKEY BROTH

INGREDIENTS:

bulletTurkey carcass
bulletWater
bulletSalt & pepper to taste

DIRECTIONS:  Break turkey bones into a large stock pot so that the bones fit in the pot.  Bones should have all fat removed, however, leave any meat that is on them.  Cover with water, bring to a boil then partially cover, reduce to a simmer & cook for several hour.  Replace water as often as needed until the last hour then simmer until reduced to 1/3d.  Strain to remove bones.

SERVING TIPS: Depending upon taste you can add chopped carrots, onions, garlic or other vegetables to the stock pot & cook with the bones.  This will increase the flavor of the broth & provide additional nutrition.  Discard the vegetables during the straining process.  Use in other recipes.
