INGREDIENTS:
 | 2 1/2 cups water |
 | 1 Pkgs (8 oz) wheat pilaf mix |
 | 1/4 cup lemon juice |
 | 1/4 cup vegetable oil |
 | 1 can (12 oz) solid white albacore tuna
packed in water, drained |
 | 1 cucumber, pared, seeded & diced |
 | 1/2 cup diced carrot |
 | 1/3 cup sliced scallions |
 | 1/4 LB mushrooms, sliced |
 | 1 tomato, chopped |
 | 1/2 cup sliced pitted ripe olives |
 | 1/2 cup chopped parsley |
 | 1/2 tsp salt |
 | 1/2 tsp Tabasco® brand pepper sauce |
 | Salad greens |
DRESSING:
 | 2 Pkg (8 oz each) plain yogurt |
 | 4 tsp fresh mint (or 1/4 tsp dried dill
weed) |
 | 1/4 tsp Tabasco® brand pepper sauce |
DIRECTIONS:
Bring water to a boil in medium saucepan, add pilaf mix; reduce heat to low,
cover & simmer 15 minutes. Remove from heat; stir in lemon juice &
oil. Let stand at room temperature until cool. Stir in remaining
ingredients except salad greens. Cover & chill several hours.
Turn into bowl lined with salad greens. Serve with Yogurt Dressing.
To prepare dressing combing ingredients mixing well & chill.
