INGREDIENTS:
 | 1 can (12 oz) tuna in water, drained
& flaked |
 | 1 can (15 oz) white beans, rinsed &
drained |
 | 1/4 cup diced roasted red bell pepper |
 | 2 Tbsp diced red onion |
 | 2 Tbsp sliced black olives |
 | 1 cup sliced pepperoncini |
 | 1 stalk celery, sliced |
 | 2 Tbsp snipped basil |
 | 2 Tbsp snipped Italian parsley |
 | 3 Tbsp olive oil |
 | 1 Tbsp balsamic vinegar |
 | 1 clove garlic, crushed |
 | 1/2 tsp fennel seed |
 | 1/2 tsp ground pepper |
 | Radicchio leaves & toasted pine nuts
for garnish |
DIRECTIONS:
Combine first 9 ingredients in a mixing bowl. Mix together the rest of the
ingredients in a small bowl until well blended. Toss with the salad
mixture & place on a platter. Surround with the radicchio leaves &
garnish with pine nuts.
SERVES: 4
