TORTILLA SOUP

INGREDIENTS:

bullet2 cans (14.5 oz) diced Mexican-style tomatoes with liquid
bullet1 Pkg (8 oz) red beans & rice
bullet3 cups chicken broth
bullet1 1/2 LB cooked chicken, diced
bullet2 tsp chili powder
bulletShredded Monterey jack cheese with jalapeno
bulletTortilla chips
bulletChopped fresh cilantro

DIRECTIONS:  Prepare beans & rice following package directions & keep warm.  Meanwhile combine tomatoes, broth, chicken & chili powder in a large pan bringing to a boil then cover & reduce to a simmer.  Cook for about 7 minutes mixing well.  Divide rice into bowls, add soup & top with cheese then tortilla's & cilantro.

SERVINGS:  6                                    TIME:  25 minutes

SERVING TIPS:  You can substitute cooked turkey for the chicken.
