TORTELLINI & TOMATO

INGREDIENTS:

bullet1 Pkg (9 oz) meat or cheese tortellini
bullet2 1/2-3 cups broccoli flowerets
bullet1/2 cup pesto (see below)
bullet2 large tomatoes cored, quartered & cut into large bite-size chunks
bulletPepper to taste
bullet1/2 cup crumbled feta cheese
bulletFresh basil to taste

DIRECTIONS:  Steam the broccoli for about 5 minutes or until it is just tender-crisp.  Drain, saving water for other use.  Place broccoli in a large bowl.  Bring fresh water to a boil & add the tortellini, cook until done according to package directions.  Drain & toss with the broccoli, adding pesto to coat well.  Add the tomatoes & toss gently to mix serve at once topped with cheese & basil.

SERVINGS:  4                                        TIME:  35 minutes

SERVING TIPS:  Use PESTO or any store-bought product of choice.
