TOP SIRLOIN STEAK

INGREDIENTS:

bullet1 1/2 LB top sirloin steak, cut into 4 serving pieces
bullet3 Tbsp butter
bullet1 Tbsp Worcestershire sauce
bullet1 tsp dried basil
bullet1/2 tsp dried tarragon
bullet3 cups sliced fresh mushrooms
bullet1/2 cup dry white wine or vermouth
bulletSalt & pepper to taste
bullet1 cup Monterey jack cheese, shredded
bullet1 Tbsp flour

DIRECTIONS:  Use a large skillet, melt the butter & add the Worcestershire sauce, basil & tarragon, sauté 30 seconds & place the meat on top of the spices & cook not more than 5 minutes per side.  Remove to a platter, cover & keep warm.  Put the mushrooms in the skillet, add the wine, salt & pepper & sauté until mushrooms are cooked.  In a small bowl toss the cheese & flour then stir into the mushrooms, simmering until cheese is melted then pour over the steaks & serve.
