TOMATO SALAD 2

INGREDIENTS:

bullet3 pints cherry or grape tomatoes, cut in half (Roma tomatoes can be substituted)
bullet1/2 cup chopped fresh basil
bullet1 1/2 tsp walnut oil or extra virgin olive oil
bullet1 medium white onion halved & thinly sliced
bulletSalt & pepper to taste
bulletButterhead or bib lettuce
bulletCurley endive

DIRECTIONS:  Combine tomato, basil, oil, onion, salt & pepper to coat the tomatoes.  Cover & refrigerate to chill well.  When ready to serve arrange lettuce & endive on salad plates, top with the tomatoes.

SERVINGS:  4-6                                    TIME:  20 minutes + chilling
