INGREDIENTS:
 | 3 pints cherry or grape tomatoes, cut in half
(Roma tomatoes can be substituted) |
 | 1/2 cup chopped fresh basil |
 | 1 1/2 tsp walnut oil or extra virgin olive oil |
 | 1 medium white onion halved & thinly sliced |
 | Salt & pepper to taste |
 | Butterhead or bib lettuce |
 | Curley endive |
DIRECTIONS: Combine tomato, basil, oil, onion,
salt & pepper to coat the tomatoes. Cover & refrigerate to chill
well. When ready to serve arrange lettuce & endive on salad plates,
top with the tomatoes.
SERVINGS: 4-6
TIME: 20 minutes + chilling
