TOMATO & GREEN BEAN SALAD INGREDIENTS:
DIRECTIONS: Prepare beans & cook in a large pot of salted boiling water until crisp & just tender. Drain then refresh the beans under cold water & drain again. Place beans in a large salad bowl. In a separate bowl, combine the Dijon mustard, olive oil, chopped onion & sherry. Whisk until combined. Pour the dressing over the beans & refrigerate several hours. Just before serving add the tomatoes & green onion. Season to taste, mix well. When placing on salad plates garnish with the snow peas. SERVINGS: 8 TOMATO & GREEN BEAN SALAD |
