TOMATO & GREEN BEAN SALAD

INGREDIENTS:

bullet2 LB fresh green beans, trimmed & cut into 2-inch pieces
bullet3 Tbsp Dijon mustard
bullet1/4 cup sherry vinegar
bullet2/3 cup olive oil
bullet1 small onion, finely chopped
bullet4-6 chopped green onions, optional
bullet2 pints baskets of cherry tomatoes, halved
bullet16 frozen snow peas, thawed, for garnish

DIRECTIONS:  Prepare beans & cook in a large pot of salted boiling water until crisp & just tender.  Drain then refresh the beans under cold water & drain again.  Place beans in a large salad bowl.  In a separate bowl, combine the Dijon mustard, olive oil, chopped onion & sherry.  Whisk until combined.  Pour the dressing over the beans & refrigerate several hours.  Just before serving add the tomatoes & green onion.  Season to taste, mix well.  When placing on salad plates garnish with the snow peas.
