TOMATO BREAD PUDDING

INGREDIENTS:

bullet2 cups peeled, seeded tomatoes (16 oz can with juices ok)
bullet3 cups bread cubes
bullet1 cup light brown sugar
bullet3/4 cups water
bullet1 tsp salt
bullet1 stick butter or margarine, softened
bullet2 tsp fresh lemon juice

DIRECTIONS:  Preheat oven to 375 F.  Cut tomatoes into small pieces, reserve all juice.  Toast bread cubes.  Combine sugar, water & salt in a sauce pan & cook until sugar & water is combined, about 5 minutes, no heavy boiling.  Add bread cubes & butter, lemon juice & cook until butter is melted.  Pour mixture into a baking dish & bake until bubbling hot.  Serve immediately.
