TACO ENCHILADA

INGREDIENTS:

bullet1 Pkg Hamburger Helper® Cheesy Enchilada Dinner
bullet1 LB lean ground beef
bullet1/2 cup soy milk, plus 3 Tbsp for topping mix
bullet2 cups hot water
bullet1 can (15 oz) black beans, rinsed & drained
bullet1 can (2 1/2 oz) sliced ripe olives
bullet1 can (4 oz) diced green chilies, drained
bullet1 cup chopped fresh tomatoes (about 1 large)
bullet1 Pkg (12 count) corn taco shells, warmed
bulletShredded iceberg lettuce to taste
bulletAVOCADO SALSA to taste

DIRECTIONS:  Prepare Hamburger Helper® following package directions adding beans, chilies & olives while the rice is cooking.  Mixture should be thick.  Meanwhile prepare the topping using the 3 Tbsp soy milk & topping mix packet (sour cream).  When enchilada mixture is done fill taco shells with enchilada mixture, top with shredded lettuce, chopped tomato, salsa & sour cream topping.

SERVINGS:                                     TIME:  25 minutes

SERVING TIPS:  Hamburger Helper®  Cheesy Enchilada Dinner is a good meal on it's own, but that is no reason you can't add your own touch.  Serve this recipe with a chilled fruit salad & enjoy.
