INGREDIENTS:
 | 1 LB ground beef |
 | 1 can (10 3/4 oz) tomato soup |
 | 1 cup Salsa of choice (try Pace Chunky Salsa or
Picante Sauce) |
 | 1/2 cup water |
 | 8 corn tortillas (6-inch), cut into 1-inch pieces |
 | 1 cup shredded cheddar cheese |
 | 1/2 cup finely chopped onion |
 | 1 clove garlic, finely chopped |
 | 1 Tbsp chili powder or to taste |
 | Chopped cilantro for garnish |
DIRECTIONS: Cook beef until browned, drain off
the fat. Add soup, salsa, water, tortillas & half of the cheese,
mixing well. Spoon mixture into a 2-quart shallow baking dish. Bake
covered at 400 F for 30 minutes or until heated through. Sprinkle with
remaining cheese & cilantro, serve.
