SWEET POTATOES & MARSHMALLOWS
INGREDIENTS:
 | 4 medium sweet potatoes or yams |
| 1/2 tsp kosher salt (or other course ground) |
| 1/4 cup orange juice |
| 2 Tbsp milk |
| 1/4 tsp ground cinnamon |
| 1/4 tsp ground ginger |
| 1/2 cup mini marshmallows |
DIRECTIONS: Bake or microwave potatoes until soft. When cool halve & scoop out the pulp. Mash with other ingredients, except the marshmallows. Preheat the oven to 350 F (176.67 C). Spray a 1 1/2 quart casserole with nonstick spray. Put in potato mixture, then smooth the surface & top with marshmallows. Bake, covered, for 20 minutes then uncover & bake 10 minutes. Serve warm.
