SWEET POTATO LATKE
INGREDIENTS:
 | 3 medium sweet potatoes, peeled & shredded, about 4 cups |
| 2 eggs, beaten |
| 1 onion, finely chopped |
| Salt to taste |
| Oil for frying |
DIRECTIONS: Combine potato, eggs, onion & salt mixing well. In a large skillet heat oil over medium heat. Spoon 1/4 cup potato mixture into the oil, flatten slightly to form a 4" patty. Cook 1 1/2-2 minutes per side or until each side is golden. Drain on paper towels. Serve warm.
SERVINGS: 10 TIME: 20 minutes
SERVING TIPS: Great topped with sour cream and a little dill.
