SUMMER SALAD

INGREDIENTS:

bullet1 can (15 oz) cut green beans, chilled & drained
bullet2 cans (15 oz) whole kernel corn, chilled & drained
bullet10-15 cherry tomatoes cut in half
bullet1/2 cup chopped red onion
bullet1/3 cup chopped cilantro
bullet1/2 cup white wine vinegar
bullet5 Tbsp oil
bullet3 Tbsp sugar
bulletSalt & pepper to taste
bullet1/2 bell pepper cut into slivers
bullet1/4 cup thinly sliced mushrooms

DIRECTIONS:  Combine vinegar, oil, sugar & cilantro whisking to blend completely.  Combine remaining ingredients & add dressing a little at a time, tossing to coat well.  (You have used to much dressing if after sitting a few minutes there is dressing in the bottom of the bowl.)  Serve immediately or refrigerate until ready to serve.

SERVINGS:  4-6                           TIME: 15 minutes
