SUMMER SALAD
INGREDIENTS:
 | 1 can (15 oz) cut green beans, chilled & drained |
 | 2 cans (15 oz) whole kernel corn, chilled & drained |
 | 10-15 cherry tomatoes cut in half |
 | 1/2 cup chopped red onion |
 | 1/3 cup chopped cilantro |
 | 1/2 cup white wine vinegar |
 | 5 Tbsp oil |
 | 3 Tbsp sugar |
 | Salt & pepper to taste |
 | 1/2 bell pepper cut into slivers |
 | 1/4 cup thinly sliced mushrooms |
DIRECTIONS: Combine vinegar, oil, sugar
& cilantro whisking to blend completely. Combine remaining ingredients
& add dressing a little at a time, tossing to coat well. (You have
used to much dressing if after sitting a few minutes there is dressing in the
bottom of the bowl.) Serve immediately or refrigerate until ready to serve.
