STUFFED MUSHROOMS

INGREDIENTS:

bulletl LB medium-large mushrooms
bullet3 Tbsp butter + 1 Tbsp
bullet1/4 cup green pepper, finely chopped
bullet1/4 cup onion, finely chopped
bullet1 1/2 cup soft bread crumbs
bullet1/2 tsp salt
bullet1/2 tsp thyme
bullet1/4 tsp turmeric
bullet1/4 tsp pepper

DIRECTIONS:  Preheat oven to 350 F (176.67 C).  Wash, trim & dry mushrooms.  Remove stems & finely chop 1/3 cup of stems.  Reserve remaining stems for other use.  Melt 3 Tbsp butter in a skillet & cook stems, green pepper & onion, stirring.  Remove from skillet & add remaining ingredients except the mushroom bodies cook a few minutes, return stem mixture to the skillet & heat.  Melt 1 Tbsp butter in a shallow baking dish.  Fill mushrooms with mixture & place in the baking dish.  Bake 15 minutes then reset the oven to broil & broil about 2 minutes.

SERVINGS:  about 3 dozen
