STUFFED EGGS JALAPENO
INGREDIENTS:
 | 4 eggs, hard boiled, peeled, cut in half lengthwise (see TO
BOIL EGGS) |
 | 1/3 cup ripe avocado, mashed |
 | 1 Tbsp minced fresh cilantro |
 | 1 Tbsp minced green onion |
 | 2 tsp (or more to taste) minced, seeded jalapeno pepper |
 | 2 tsp fresh lime juice |
 | 1/4 tsp kosher salt, or to taste |
 | Fresh cilantro leaves for garnish, optional |
DIRECTIONS: Carefully remove yolk from
the eggs & mash in a bowl with avocado, cilantro, onion, peppers, lime juice
& salt. Blend well. Carefully fill the egg whites with the yolk
mixture with a little mound on top. Add a leave of cilantro & chill.
