STUFFED BELL PEPPER 2

INGREDIENTS:

bullet6 large bell peppers (green, red, yellow)
bullet1 LB ground beef
bullet1 cup cooked rice
bullet2 Tbsp minced onion
bulletSalt & pepper to taste
bullet1 cove garlic, minced
bullet1 can (15 oz) stewed tomatoes
bullet6 slices American cheese, or cheese of choice

DIRECTIONS:  Cut off the top of each pepper & remove the seeds & membrane.  Combine remaining ingredients, except half of the tomatoes & the cheese, mixing well.  Spoon the mixture into each pepper.  Place peppers in a microwave safe dish & pour the remaining half of tomatoes over them.  Cover with plastic wrap & cook on high 20-25 minutes, rotating once.  Cover each pepper with a slice of cheese & cook another 1 minute on high.  Allow to sit 1-2 minutes & serve.
