STUFFED ACORN SQUASH 2

INGREDIENTS:

bullet1 large table queen (acorn) squash
bullet1 1/2 fresh cranberries (if using dried use slightly less)
bulletGround nutmeg to taste (about 1/4 tsp or more)
bulletButter or margarine

DIRECTIONS:  Cut squash in half & scrape out the seeds & strings.  Liberally butter the inside then add about 1 tsp more to the bottom of the cavity.  Fill the cavity with cranberries then sprinkle the berries & top edges of the squash with nutmeg.  Place both half's of squash in a baking pan with about 1/4-inch water, cover with foil & bake at 400 F for 30-40 minutes or until cooked to your desired softness.

SERVING TIPS:  If desired you can add chopped walnuts to the cranberries.
