STRAWBERRY PIZZA 2

INGREDIENTS:

bullet1 Pkg (7 1/2 oz) refrigerated biscuits
bullet1 orange
bullet1 Pkg (8 oz) light cream cheese
bullet5 tsp honey, divided, at room temperature
bullet2 1/2 cups fresh strawberries, hulled & sliced in half lengthwise
bulletFresh cilantro to taste

DIRECTIONS:  Preheat oven to 400 F.  Stack two biscuit dough then roll into a 6-inch circle, about 1/8th inch thick.  Continue until you have 5 circles.  Bake until golden brown, about 6-8 minutes.  Remove from the oven & allow to cool slightly.  Meanwhile zest the orange peel & add to a bowl with the cream cheese & 3 tsp of the honey, beat blending well.  In a separate bowl combine the strawberries, juice from the orange & 2 tsp honey tossing to coat.  Drain excess liquid.  Spread the cheese mixture on each biscuit to 1/2 inch of the edge.  Increase oven to 425 F & bake the "pizza" until cheese is lightly browned, remove & top with strawberries & cilantro, serve warm.
