STEAK SANDWICH

INGREDIENTS:

bullet1/2 LB (or to taste) boneless sirloin steak
bullet1 tsp cumin
bullet1/2 tsp salt
bullet1/4 tsp pepper
bullet2 Tbsp oil
bullet8 slices French bread or your favorite roll cut in half
bulletMayonnaise or spread of choice (see SPREADS)
bullet4 cups fresh spinach (see HOW TO WASH SPINACH)
bullet4 slices (large 1/8-inch thick) or more tomato

DIRECTIONS:  Combine the cumin, salt & pepper & rum onto both sides of the steak.  Heat the oil in a skillet until it is hot, add the steak & cook over medium-high heat 4-5 minutes on each side for rare, or a bit longer to taste.  Remove the steak to a plate & let sit for 5 minutes.  Meanwhile spread the bread with mayonnaise & layer spinach on 4 slices of the bread, top with a slice of tomato & then cut the steak into strips (across the grain), thin slices are best.  Divide the steak to each of the 4 slices of bread & top with the cut each in half.

SERVES:  4                                       TIME:  25 minutes
