INGREDIENTS:
 | 6 cups fresh spinach torn into bite-sized pieces
(see HOW TO WASH SPINACH) |
 | 6-8 red radishes, thinly sliced |
 | 1 cup thickly sliced strawberries |
 | 1 cup blueberries |
 | 1 red onion, thinly sliced & rings separated |
 | 1/2 cup chopped pecans |
 | 2 Tbsp balsamic vinegar |
 | 2 Tbsp rice vinegar |
 | 1 Tbsp plus 1 tsp honey, room temperature |
 | 1 tsp curry powder |
 | 2 tsp Dijon-style mustard |
 | Salt & Pepper to taste |
DIRECTIONS: Whip together ingredients for
dressing (balsamic vinegar through salt & pepper), set aside. Wash
& dry the spinach. Add spinach & radish to the dressing & toss
lightly. Add berries, onion & pecans. Toss lightly & divide
onto salad plates.
