SPINACH SALAD
INGREDIENTS:
 | 1 LB fresh spinach cleaned (see HOW TO WASH SPINACH |
 | 1 Tbsp mustard |
 | 1 Tbsp vinegar |
 | Salt & pepper to taste |
 | 5 Tbsp oil |
 | 3 hard boiled eggs, peeled & chopped (see TO BOIL EGGS) |
 | 1 small red onion, cut in half then sliced thin |
 | 10-12 whole mushrooms, cleaned & thinly sliced |
DIRECTIONS: Tear spinach into pieces
& set aside. In a salad bowl combine mustard, vinegar, salt &
pepper. Blend well with a whisk. Add oil & whisk until
smooth. Add eggs spinach, onion & mushrooms, toss well.
