SPINACH & PINE NUTS INGREDIENTS:
DIRECTIONS: Heat oil & butter in a large pot until it is hot, 1-2 minutes. Add onion & sugar, sauté until tender & golden, 10 minutes, add garlic & anchovies mashing both. Sauté 1-2 minutes, add apricots, vinegar & spinach. Toss well to combine. Cover the pot & increase heat to medium-high & cook, stirring occasionally until spinach is bright green & slightly tender, 3-5 minutes. Remove from heat, add pine nuts & toss well. SERVINGS: 6 TIME: 25 minutes SERVING TIPS: Some like spinach well cooked, some like it slightly crisp. Your choice, cook more or less to taste, its all good. Note: Can be prepared using a large skillet if you like to "fry". SPINACH & PINE NUTS
