SPINACH MASHED POTATO

INGREDIENTS:

bullet5 LB potatoes, peeled & sliced 1/4" thick
bullet1/2 cups butter
bullet3/4 cup milk, or soy milk
bullet2 Tbsp salt, or to taste
bullet1 tsp pepper, or to taste
bullet2 boxes (10 oz each) frozen chopped spinach, thawed & squeezed dry

DIRECTIONS:  Put potatoes in a large pot, cover with water & bring to a boil.  Cook 12-15 minutes or until tender.  Drain well.  Add butter, milk, salt & pepper.  Mash & mix well to blend and smooth.  Mixture can have small lumps, if desired.  Add the spinach & mix well.  Serve with gravy.
