SPICY HAM GLAZE

INGREDIENTS:

bullet3/4 cup packed brown sugar
bullet1/3 cup cider vinegar
bullet1/4 cup golden raisins
bullet1 can (8 oz) sliced peaches drained, chopped & juice reserved
bullet1 Tbsp cornstarch
bullet1/4 cup orange juice
bullet1 can (8 oz) crushed pineapple with juice
bullet1 Tbsp grated orange peel
bullet1 clove garlic, crushed
bullet1/2 tsp red pepper flakes
bullet1/2 tsp grated fresh ginger

DIRECTIONS: Combine brown sugar, vinegar, raisins & peach syrup in medium saucepan.  Bring to a boil over high heat, reduce to low & simmer 8 to 10 minutes.  In a small bowl, dissolve cornstarch in orange juice, add to the brown sugar mixture.  Add remaining ingredients, mixing well.  Cook over medium heat, stirring constantly until mixture boils & thickens.  Remove fro heat.  Brush half of the glaze over ham 30 minutes before finished cooking.  When ham is done, remove it from the oven & brush with the rest of the glaze & let sit 15-20 minutes before serving.

SERVING:  2 cups                               TIME:  30 minutes

SERVING TIPS:  Great on all pork, beef & chicken.
