SOFT TACO

INGREDIENTS:

bullet1 LB boneless top sirloin steak, cut into this strips
bullet1 Tbsp oil
bullet2 cups water
bullet1 cup salsa (see SALSA)
bullet1 Pkg taco seasoning mix
bullet2 cups instant rice, uncooked
bullet10 8-inch flour tortillas
bullet1 can sliced black olives
bullet1 cup shredded cheddar cheese
bulletShredded lettuce to taste

DIRECTIONS:  Heat oil in a skillet using medium-high heat.  Add the beef cooking & stirring until meat is lightly browned.  Stir in salsa, water & seasoning mix.  Bring to a boil, stir in rice, cover & remove from heat & let sit for 5 minutes, or until rice is cooked.  Meanwhile warm the tortillas in the microwave, keep warm  & assemble remaining ingredients.  Spoon the beef-rice mixture evenly on one side of each tortilla.  Add a portion of remaining ingredients to each tortilla, fold the other side of tortilla to close.
