SHRIMP TACO'S

INGREDIENTS:

bullet3/4 LB (24) large cooked shrimp
bullet1/2 cup diced tomato
bullet1/3 cup green salsa
bullet2 Tbsp chopped fresh cilantro
bullet1 1/2 Tbsp olive oil
bullet1 Tbsp fresh lime juice
bullet1/4 tsp salt
bulletPinch of ground cumin
bullet8 corn tortillas
bullet2 cups thin sliced romaine lettuce
bullet1/4 cup thin sliced red onion
bullet1 large avocado peeled, seeded, chopped

DIRECTIONS:  Combine first 8 ingredients in a bowl & mix.  Place each tortilla folded between a damp paper towel & microwave on high for 1 minute.  Place 2 tortillas on each plate & top with the shrimp mixture.  Divide lettuce, onion & avocado between each taco.  Serve cold or room temperature.

SERVES:                                TIME:  10 minutes

SERVING TIPS:  In place of large shrimp you can use the small cooked shrimp in an amount equal to the 24 large shrimp.
