SHRIMP SALAD

INGREDIENTS:

bullet1/2 LB fresh green beans, cut diagonally
bullet1 LB large cooked shrimp, peeled
bullet3 cups cucumber, seeded & cubed
bullet2 cups chopped fresh tomato
bullet1/3 cup diced green bell pepper
bullet1/4 cup green onions, sliced diagonally
bullet1/4 cup fresh basil, thinly sliced
bullet1/4 cup tomato juice
bullet3 Tbsp red wine vinegar
bullet4 tsp extra virgin olive oil
bullet1/4 tsp sugar
bullet1/4 tsp salt
bulletPepper to taste
bulletTabasco sauce to taste
bullet8 cups mixed salad greens

DIRECTIONS:  Steam beans until tender crisp, about 4 minutes.  Drain & cool with cold water, drain again.  Combine shrimp, cucumber, tomatoes, bell pepper & onion in a large bowl.  Combine in a separate bowl the basil, tomato juice, vinegar, oil, sugar, salt, pepper & tobacco mixing well.  Combine both bowls mixing to coat well.  Toss with salad greens & toss well.  Serve immediately.
