SHRIMP SALAD
INGREDIENTS:
 | 1/2 LB fresh green beans, cut diagonally |
 | 1 LB large cooked shrimp, peeled |
 | 3 cups cucumber, seeded & cubed |
 | 2 cups chopped fresh tomato |
 | 1/3 cup diced green bell pepper |
 | 1/4 cup green onions, sliced diagonally |
 | 1/4 cup fresh basil, thinly sliced |
 | 1/4 cup tomato juice |
 | 3 Tbsp red wine vinegar |
 | 4 tsp extra virgin olive oil |
 | 1/4 tsp sugar |
 | 1/4 tsp salt |
 | Pepper to taste |
 | Tabasco sauce to taste |
 | 8 cups mixed salad greens |
DIRECTIONS: Steam beans until tender
crisp, about 4 minutes. Drain & cool with cold water, drain
again. Combine shrimp, cucumber, tomatoes, bell pepper & onion in a
large bowl. Combine in a separate bowl the basil, tomato juice, vinegar,
oil, sugar, salt, pepper & tobacco mixing well. Combine both bowls
mixing to coat well. Toss with salad greens & toss well. Serve
immediately.
