SEAFOOD SALAD

INGREDIENTS:

bullet3 cups crab meat, cooked
bullet3 cups small shrimp, cooked & peeled
bullet5 green onions, minced
bullet1 cup diced fresh pineapple
bullet1 papaya, diced
bullet1 cup diced Jicama, peeled & diced
bullet2/3 cups pine nuts (or peanuts)
bullet1/3 cup golden raisins
bullet2 mango's, peeled & diced
bulletJuice of 2 lemons
bulletJuice of 1 lime
bulletZest from one lemon
bulletSalt to taste
bullet16 large romaine lettuce leaf's
bulletCOCONUT SALAD DRESSING to taste
bullet2 tomatoes, cut into 8 wedges each
bullet8 large shrimp, cooked, peeled for garnish
bullet8 large olives (black or green) for garnish (try large green olives stuffed with garlic or jalapeno)

DIRECTIONS:  Combine ingredients less lettuce & garnish in a large bowl, tossing to mix well.  Let sit for 15 minutes.  Line 8 salad plates with lettuce & spoon equal portions of the seafood onto the lettuce & top with some reserved dressing and garnish with 2 tomato wedges, 1 large shrimp & 1 olive.

SERVES:  8                                               TIME:  40 minutes
