SEAFOOD SALAD
INGREDIENTS:
 | 3 cups crab meat, cooked |
 | 3 cups small shrimp, cooked & peeled |
 | 5 green onions, minced |
 | 1 cup diced fresh pineapple |
 | 1 papaya, diced |
 | 1 cup diced Jicama, peeled & diced |
 | 2/3 cups pine nuts (or peanuts) |
 | 1/3 cup golden raisins |
 | 2 mango's, peeled & diced |
 | Juice of 2 lemons |
 | Juice of 1 lime |
 | Zest from one lemon |
 | Salt to taste |
 | 16 large romaine lettuce leaf's |
 | COCONUT SALAD DRESSING
to taste |
 | 2 tomatoes, cut into 8 wedges each |
 | 8 large shrimp, cooked, peeled for garnish |
 | 8 large olives (black or green) for garnish (try large green olives
stuffed with garlic or jalapeno) |
DIRECTIONS: Combine ingredients less
lettuce & garnish in a large bowl, tossing to mix well. Let sit for 15
minutes. Line 8 salad plates with lettuce & spoon equal portions of
the seafood onto the lettuce & top with some reserved dressing and garnish
with 2 tomato wedges, 1 large shrimp & 1 olive.
