INGREDIENTS:
 | 1/2 cup fresh lemon juice |
 | 1 white onion, finely chopped |
 | 1/3 cup cilantro, finely chopped |
 | 1 (or more, more being best) jalapeno pepper,
seeded & finely chopped |
 | 1/2 cup extra virgin olive oil |
 | Salt & pepper to taste |
DIRECTIONS: Combine ingredients, except oil,
mixing well. Whisk in the oil slowly to combine ingredients.
SERVINGS: 1 cup
SERVING TIPS: This is an excellent dressing
for salads & fish. If desired you can add 1 Tbsp Capers; 1 or more
cloves of garlic, minced; and/or 2 to 3 anchovy fillets, minced.
