ROAST TENDERLOIN

INGREDIENTS:

bullet4-5 LB beef tenderloin, fat removed
bullet3-4 slices of bacon
bulletfresh garlic
bulletSalt & pepper to taste

DIRECTIONS:  Preheat oven to 500 F.  Rub roast well with garlic or spike the roast with slivers of garlic.  Fold the thin end of the roast under & tie with string.  Wrap bacon around the roast & tie with string.  Salt & pepper to taste.  Insert a temperature gage in the thickest part.  Spray a roasting pan with pan spray, place roast in the oven, uncovered & turn the temperature down to 350 F.  Bake 20-30 minutes or until temperature reaches desired doneness.  Roast is best served rare.  After removing from the oven cover with foil & allow to rest 1-15 minutes (roast will continue to cook).  

SERVINGS:  8                                        TIME:  1 hour

SERVING TIPS:  Arrange STUFFED MUSHROOM 2 around the roast & serve with ROASTED VEGETABLES.
