ROASTED VEGETABLES
INGREDIENTS:
 | 1 red bell pepper, cut in bite size pieces |
 | 1 green bell pepper, cut in bite size pieces |
 | 1 LB fresh asparagus, snap off the hard root end
then cut into thirds |
 | 1 zucchini, cut into 1 inch pieces |
 | 1 yellow summer squash, cut in 1 inch pieces |
 | 1 red onion, thinly sliced & separated into
rings |
 | 1 cup baby carrots, washed & peeled |
 | 3 Tbsp olive oil |
 | 1 tsp salt |
 | 1/4 to 1/2 tsp pepper |
DIRECTIONS: Combine
oil, salt & pepper mixing well. Add remaining ingredients & toss
to coat well. Divide into four packages made of foil & put on a medium
hot grill for about 30 minutes or until vegetables are tender. (Turn
several times to get an even cooking.)
SERVES: 4
TIME: 40 minutes
