ROASTED VEGETABLES

INGREDIENTS:

bullet1 red bell pepper, cut in bite size pieces
bullet1 green bell pepper, cut in bite size pieces
bullet1 LB fresh asparagus, snap off the hard root end then cut into thirds
bullet1 zucchini, cut into 1 inch pieces
bullet1 yellow summer squash, cut in 1 inch pieces
bullet1 red onion, thinly sliced & separated into rings
bullet1 cup baby carrots, washed & peeled
bullet3 Tbsp olive oil
bullet1 tsp salt
bullet1/4 to 1/2 tsp pepper

DIRECTIONS:  Combine oil, salt & pepper mixing well.  Add remaining ingredients & toss to coat well.  Divide into four packages made of foil & put on a medium hot grill for about 30 minutes or until vegetables are tender.  (Turn several times to get an even cooking.)

SERVES:  4                                    TIME: 40 minutes
