ROASTED EGGPLANT

INGREDIENTS:

bullet1 1/4 LB egg plant, peeled & cut into 1" thick pieces
bullet2 Tbsp olive oil
bullet8 clovers garlic, large, peeled
bullet1 pint cherry tomatoes, cut in half
bullet1/4 cup chopped red onion
bullet2 Tbsp chopped fresh cilantro
bullet2 Tbsp chopped fresh dill
bullet2 Tbsp red wine vinegar

DIRECTIONS:  Preheat oven to 350 F (176.67 C).  Arrange egg plant in a 9 x 13 baking pan & drizzle over it, stirring to coat well.  Roast for 20 minutes.  Add garlic cloves & continue to roast until garlic is tender, about 20 minutes.  Stir once or twice.  Remove from the oven & cool.  Chop the garlic & put into a bowl, add remaining ingredients, salt & pepper to taste.  Allow to cool to room temperature, adding the egg plant, mixing well.

SERVES:  4                                    TIME:  about 1 hour
