INGREDIENTS:
DIRECTIONS: Use a large electric fry pan with cover, cook the chicken in the oil until almost done, turning to brown. Remove & allow to cool slightly. Combine the bell pepper & onion & simmer 2-3 minutes stirring a couple times. Add the tomatoes with liquid & the rice following package directions for liquid & bring to a boil, mix well. Meanwhile, remove the bones & skin from the chicken. Add the chicken to the rice mixture, stir, cover & cook until most of the liquid is absorbed & rice is done, stirring often. Season with hot sauce to taste cooking another 1-2 minutes. SERVINGS: 4 TIME: 45 minutes SERVING TIPS: Serve with a green vegetable, toasted French bread & fresh fruit. Instead of using chicken, try 1 1/2 LB of BASIC HAMBURGER, just drain off the extra fat & keep on going. RICE & CHICKEN |
