QUICK CHEF SALAD

INGREDIENTS:

bullet2 leaves of red or butter lettuce
bullet1 egg, boiled, peeled, quartered & washed with fresh lemon juice
bullet1/4 cup finely chopped ham or chicken
bullet2-3 slices cucumber, halved with skin on
bullet1-2 leaves of endive
bullet1 Tbsp coarsely chopped red cabbage
bullet1/2 medium tomato cut in wedges

DIRECTIONS:  Combine all ingredients, mixing well.  Add your choice of croutons & dressing.

SERVINGS:  1                                TIME:  10 minutes

SERVING TIPS: If you are needing a salad for lunch, try this,  just place the tomato & egg in the bottom of a container, add the rest of the ingredients, less dressing & croutons (you should toss them).  Seal the container & refrigerate.  When ready to eat lunch, add the croutons & dressing, mix & enjoy.
