PUMPKIN SOUP INGREDIENTS:
DIRECTIONS: Cook bacon in a large sauce pan over medium heat until crisp. Remove with slotted spoon & set aside. Add onion & carrot to the pan & cook for 4 minutes, stirring occasionally. Add the broth & simmer uncovered, 10 minutes. Transfer to food processor & process until smooth. Return to saucepan & stir in half & half, pumpkin, salt & pepper. Bring to a simmer, do not boil. Serve in bowls topped with sour cream & reserved bacon. SERVINGS: 6 TIME: 35-40 minutes SERVING TIPS: Not bad chilled. PUMPKIN SOUP |
