PUMPKIN MUFFINS 2

INGREDIENTS:

bullet2 cups all-purpose flour
bullet2/3 cup firmly packed brown sugar
bullet1/3 cup sugar
bullet1 Tbsp baking powder
bullet1 tsp salt
bullet1 tsp cinnamon
bullet1/4 tsp baking soda
bullet1/4 tsp ground ginger
bullet1/2 cup butter, melted
bullet1/2 cup fresh cooked pumpkin (1/2 cup canned ok)
bullet1/3 cup buttermilk
bullet2 eggs, slightly beaten

DIRECTIONS:  Preheat oven to 400 F (204.44 C).  Combine all ingredients except the butter, pumpkin, buttermilk & eggs.  In a separate bowl combine the remaining ingredients.  Stir pumpkin mixture into the flour mixture to moisten, mixing well.  Spoon into paper-lined or greased muffing pan (3/4 full) & bake for 15-20 minutes or until lightly browned & toothpick comes out clean.  Cool 5 minutes then remove from the pan.

SERVINGS:  12                                    TIME:  30 minutes

SERVING TIPS:  Get up a little early & have warm for breakfast; serve with holiday meals by reheating in  microwave; slice in half & make a great left-over turkey sandwich.
