PUMPKIN MUFFINS INGREDIENTS:
DIRECTIONS: Preheat oven to 400 F (204.44 C). Grease muffin tins (about 2 1/2" diameter tops. Cream butter & sugar until fluffy. Beat in the eggs & pumpkin. Dredge raisins in 1/2 cup flour. Sift 3 cups flour, baking powder, cinnamon, nutmeg & salt together. Add dry ingredients & milk slowly mixing just until blended. Do not over mix. Spoon into tins filling 3/4 of the cup. Bake for 20-25 minutes or until toothpick comes out clean. SERVINGS: 24 muffins PUMPKIN MUFFINS |
