PUMPKIN MUFFINS

INGREDIENTS:

bullet1/2 cup butter
bullet1 cup sugar
bullet2 eggs
bullet1 cup canned pumpkin
bullet1 cup raisins
bullet3 1/2 cups all-purpose flour, divided
bullet4 tsp baking powder
bullet1/2 tsp cinnamon
bullet1/2 tsp nutmeg
bullet1 tsp salt
bullet1 2/3 cups milk

DIRECTIONS:  Preheat oven to 400 F (204.44 C).  Grease muffin tins (about 2 1/2" diameter tops.  Cream butter & sugar until fluffy.  Beat in the eggs & pumpkin.  Dredge raisins in 1/2 cup flour.  Sift 3 cups flour, baking powder, cinnamon, nutmeg & salt together.  Add dry ingredients & milk slowly mixing just until blended.  Do not over mix.  Spoon into tins filling 3/4 of the cup.  Bake for 20-25 minutes or until toothpick comes out clean.

SERVINGS:  24 muffins
