PUMPKIN CHEESECAKE
INGREDIENTS:
 | 2 Pkg (8 oz each) cream cheese, softened |
| 1/2 cup sugar |
| 1/2 tsp vanilla |
| 2 eggs |
| 1/2 cup canned pumpkin, or use fresh (see PUMPKIN) |
| 1/2 tsp ground cinnamon |
| Dash of ground cloves |
| Dash of nutmeg |
| 1 ready made graham cracker pie crust |
DIRECTIONS: Combine cream cheese, sugar & vanilla with electric mixer using medium speed blending well. Add eggs, mix until blended. Stir in the pumpkin & spices into 1 cup of the batter. Pour remaining plain batter into the crust & top with the pumpkin batter. Bake at 350 F (176.67 C) for 35-40 minutes or until center is almost set. Cool then refrigerate at least 3 hours, best overnight.
