PUFF PANCAKES

INGREDIENTS:

bullet1/4 cup butter
bullet3 eggs
bullet1 1/2 cup milk
bullet1/2 cup sugar
bullet3/4 cup flour
bullet1/4 tsp salt
bullet3 cup strawberries, washed, hulled & cut in half
bulletSour cream
bulletBrown sugar

DIRECTIONS:  Place butter in a 9" baking dish & put into a 425 F (218.33 C) oven until butter bubbles (5-10 minutes).  Meanwhile beat together eggs, milk, 6 Tbsp sugar, flour & salt until smooth.  Remove pan from oven & pour mixture into pan, returning to the oven & cook for 30 minutes or until edges are puffed & brown.  Combine strawberries with remaining sugar.  When pancake is done remove & spoon into the center of the pancake, cut into wedges.  Add sour cream & brown sugar to taste.
